Sweet & Sour Chicken With Greek Salad

A light lunch that is packed full of flavour and convenience, perfect for lunches or light dinner options.


  • 1 chicken breast (pre-cooked & cooled) 
  • Crunchy salad leaves
  • ¼ Red onion (finely chopped)
  • Handful of cherry tomatoes
  • Feta cheese 
  • Black olives
  • Lemon vinaigrette 


  1. Marinade the chicken in your sweet and sour sauce for a minimum of 30 minutes before cooking
  2. Place the chicken breast on a baking tray and cook in the oven at 180ºC for 15 minutes or until cooked
  3. Leave to one side to cool, then cut or tear into pieces
  4. Scatter the salad leaves along the bottom of the bowl
  5. Finely chop one quarter of a red onion and sprinkle over the leaves
  6. Add the tomatoes, feta, olives & chicken pieces
  7. To make the vinaigrette, mix the juice of a half a lemon with a tablespoon of olive oil and a pinch of black ground pepper
